Blanca Isabel is the only purple kernel variety available in the United States that has American long-grain quality. The Blanca Isabel variety has a long (9.98mm) grain that is slender (width = 2.36mm). Its length/width ratio is 4.23. Whereas, milled white rice usually measures 6.6-7.2 mm in length and 2.2-2.3mm in width. Blanca Isabel Purple Rice is similar to white rice because it is easy to digest, gluten free and similar cooking times. In general, it takes 20 -25 minutes to prepare, Additionally, its taste and texture is similar to the American Long grain white rice.
The Blanca Isabel variety has a dark purple/ black bran layer. It is unusual in that the purple color is not restricted to the bran layer, but extends into the endosperm of the grain. When milled, the Blanca Isabel kernel retains the purple to lavender color that contains the health nutrients of the rice.
The kernel’s purple color is due to anthocyanin compounds. The primary anthocynanin compounds in Blanca Isabel are cyanidin-3-O-glucoside and peonidin-3-O-glucoside. These compounds are bioactive and have been recognized as health-enhancing substances due to their antioxidant activity, anti-inflammatory, anticancer, anti-atherogenic, and anti-hypoglycemic effects.
